In the glass, the 2025 Nova 7 shows a luminous pale salmon hue. The nose opens with orange blossom, ripe lychee, and mandarin peel, layered with white peach, apricot, and floral lift. On the palate, seamless sweetness and vibrant acidity carry notes of tangerine zest and stone fruit, leading to a long, poised finish defined by aromatic persistence rather than sugar.

FURTHER NOTES
The 2025 growing season stands as a once-in-a-lifetime vintage in Nova Scotia,
shaped by exceptional heat and prolonged drought-like conditions. Rather than
accelerating ripeness beyond balance, restricted water availability moderated vine
metabolism, slowing sugar accumulation while allowing aromatic and structural
development to unfold with rare precision. The absence of rainfall during ripening
eliminated disease pressure, yielding pristine, highly concentrated fruit, with Muscat
and other aromatic varieties reaching full physiological maturity without dilution.
At the same time, the season revealed the broader vulnerability of the landscape,
marked by drought stress and wildfires - giving this remarkable vintage both
brilliance and gravity.
