In the glass, deep golden colour with a rich straw hue. The nose features an ethereal bouquet of candied citrus, white pepper and spices, all brightened by zesty minerals. The palate is texturally profound and focused, with persistent suggestions of ripe apricot and roasted espresso beans. A highly complex and energetic finish extends the tension with everlasting notes of chalk and sea minerals.

FURTHER NOTES

"Quite simply one of the best sparkling wines yet produced in Canada. Mature flavours put this in the same category as long-aged, Vintage champagne, à la Dom Pérignon or Cristal." - John Szabo, Master Sommelier

As we have monitored its evolution in the bottle, the 2016 vintage is shaping up to become a legend in the making: a generous year with the rare combination of quality and quantity that allowed us unprecedented blending flexibility. As such, we were able to set aside a significant amount of 2016 reserve wines to be aged exclusively in neutral French Oak, providing the opportunity to study the impact of additional "élevage", or barrel ageing, on wines destined for secondary fermentation.

This blanc de blancs cuvée came to life after certain barrels routinely showed so well, the appeal to make a small lot wine simply could not be ignored. Dubbed Full malolactic fermentation, plus additional barrel ageing provides unusual textural roundness; so much so that this rare sparkling received no dosage and is presented to you in its natural state.
