FURTHER NOTES

This vintage-dated rosé is a Brut Nature, also known as Zero Dosage or Brut Zero. It is a sparkling wine made without a dosage, the common introduction of a sweet liqueur in the final step of making a Traditional Method Sparkling wine such as French Champagne. Dosage is normally introduced to improve balance and weight, as many sparkling wines from cooler climates feature higher acidity levels than still wines from warmer areas. In this particular case, the opportunity to create this particular style emerged from a climatic hardship, a spring frost on June 4th, 2018. The significantly lower yields increased the flavour intensity in the mere 15% of our crop that survived, thanks to the plants giving all their energy all summer and fall to such a minimal amount of grapes. This led to softness, ripeness and richness; a vinous and highly textural profile perfectly suited for the absence of balancing sugars in a Brut Nature. For the same reasons as this wine is exceptional, it is sadly proportionately limited in quantity.
