Crafted with the same care as our vintage sparkling wines, this limited release was aged in an extraordinary natural cellar: beneath the cool waters of the Atlantic Ocean. Submerged off Nova Scotia’s coast, the bottles rested in darkness, where steady temperatures and the gentle rhythm of the sea created a distinctive aging environment shaped by time, tide, and place.

The result is a bright, elegant sparkling rosé with lively bubbles and refreshing character - equally suited to spring gatherings, patio afternoons, and weekend escapes. A wine that invites conversation and reflects both curiosity and craftsmanship.

Tasting Profile

NV Rosé Underwater Quest opens with layers of red fruit - cherries and wild strawberries - lifted by crisp green apple and a delicate marine freshness. A subtle salinity carries through the palate, accompanied by fine bubbles, vibrant minerality, and gentle autolytic complexity. The finish is long and precise, shaped by both the wine’s origin and its time beneath the sea.

The Backstory of Underwater Aging

Inspired by the remarkable preservation of historic Champagne bottles discovered in Baltic Sea shipwrecks - some resting undisturbed for nearly two centuries - we set out to explore what the ocean might offer as a natural cellar. The project reflects our ongoing curiosity and willingness to experiment, guided by both tradition and innovation.

Our first expedition began with the 2018 Brut. Bottles were submerged in the cold waters of Nova Scotia’s Eastern Shore, where the dark, cool seabed provided a uniquely stable environment. Months later, they emerged gently marked by the sea - their surfaces textured by marine growth, their character subtly shaped by time, pressure, and the quiet influence of the Atlantic.
