In the glass, a golden wheat colour with a straw hue. On the nose, a complex primary bouquet offers up a blend of apple, lime peel, alpine botanicals, fresh pastry, and smoke. On the palate, the wine is deep and full-bodied, with notes of pastry cream, candied ginger, and poached plum leading to a very long and seamlessly balanced finish.

This wine is the second instalment of the vintage which reveals the transformative evolution of our traditional method sparkling program; a change intuitively affected in 2016.
Following in the footsteps of the '16 Brut Rosé, the introductory wine of this transcendent vintage in the making, the ‘16 Brut sheds a light on the proverbial richness of this textbook growing season. Amongst the technical differences observed with this vintage are the introduction of complete malolactic fermentations, fermentations and elevage in oversized French barrels as well as harvest parameters priming ripeness and full maturity.
All of these new stylistic guidelines share in common their ability to promote rich and opulent textural qualities, aimed at complementing the natural acidity found in Gaspereau-grown Chardonnay.
As if Mother Nature supported this aesthetic transition, a vintage of superlative richness emerged in 2016, adding a decadent advantage linked to prolonged dry weather as well as the highest seasonal heat units in recorded history (a record which has since been exceeded in 2020). This historical wine classifies as a Blanc de Blancs in the Champagne nomenclature, or in other words, made exclusively from Chardonnay.
