In the glass, a pale straw colour with a brilliant gold hue. On the nose, hints of apricots, spiced apples, and lemon rind are supported by delicate floral top notes. On the palate, aromas of pear, green apple, eshly baked bread, honeycomb, and
praline combine for a full-bodied and layered core. A lengthy,saline finish wraps around the palate for minutes.

FURTHER NOTES
"Blanc de Blancs" denotes a white wine crafted solely
from white grapes, commonly associated with
Champagne and wines made from 100% Chardonnay.
This stands in contrast to the conventional practice of
blending with white wines derived from red grape
varieties such as Pinot Noir and Pinot Meunier. Amidst
the backdrop of climatic variations, ranging from
extreme cold to intense heat, the year 2020 etched its
mark as the warmest vintage on record. The results
were twofold; firstly, harvest dates arrived remarkably
early, with vinifera varieties harvested three weeks
ahead of the traditional timeframe. Secondly, despite
the accelerated harvest, the acidity exhibited a notable
softening – a characteristic increasingly observed in the
stylistic evolution of recent Champagne vintages
influenced by changing climates and elevated
temperatures. Within the confines of our cellar, this
micro-cuvée, composed entirely of Chardonnay,
underwent a meticulous élevage in a single 500L
French demi-muid, intensifying its textural complexity.
The process included a full malolactic fermentation and
over three years of bottle ageing before disgorging.
The outcome is a rare and exclusive wine, crafted
expressly for the club, showcasing layers of depth and
density previously unseen in our cool climate.
