Our latest exploration in sea-bed aging - the NV Brut and NV Rosé Underwater Quest - brings together the soul of our flagship sparklings with the wild serenity of the ocean’s depths. More than an experiment, this is a poetic dialogue between our Maritime terroir and the rhythms of the sea.
On the palate, both cuvées reveal a richness drawn from reserve wines, while preserving youthful energy and minerality. The NV Brut expresses hints of lime blossom, a whisper of smoke, and a luminous structure, all lifted by persistent, sea-salinated acidity - a reflection of its gentle undersea maturing.
Meanwhile, the NV Rosé Underwater Quest unfurls layers of red fruit — think cherries and strawberries - overlain with bright green apple freshness, delicate marine brine, and a refined salinity that lingers long into the finish.
The wines’ vibrant minerality, marine adornments, and subtle yeasty complexity make them not just sparklers, but a tribute to nature’s power to preserve and transform over time.

FURTHER NOTES
Inspired by tales of the near-miraculous preservation of ancient Champagne bottles found laying dormant for up to 200 years in various Baltic Sea shipwrecks, we launched this risky project driven by the allure of the unknown and our tendency to push the boundaries of winemaking. Fueled by curiosity, we aimed to understand the potential benefits of ageing sparkling wine in a dark and cold seabed, the most unique natural cellar. Having navigated many uncertainties that could have led to losing our entire production, this risk-taking adventure became a technical success. Thanks to our gregarious winemaking team and our local fisher friends.
Five years after our first exploration of Underwater Quest - we were ready for the follow-up. We held our breath and sank several cages of our Benjamin Bridge '18 Brut, a precise and exceptional traditional method sparkling made from Chardonnay and Pinot Noir, into the waters of Nova Scotia's Eastern Shore. After several months on the seabed in the shifting tides amongst the aquatic biodiversity, we pulled up the bottles and breathed a sigh of relief to find them intact and beautifully decorated.
Each bottle of this underwater vintage Brut holds a story of adventure, winemaking expertise, and the ocean's quiet influence. With its vibrant minerality and marine adornments, it's more than a sparkling wine; it's a tribute to nature's ability to preserve and transform.
