The 2021 vintage in Nova Scotia began with a moderate spring and gradual bud break, setting the tone for a balanced and steady growing season. Despite the disruption of Hurricane Larry in early September, the vineyards proved resilient, supported by a warm summer marked by above-average heat and ideal growing degree days. These favourable conditions allowed Pinot Noir and Chardonnay to reach optimal ripeness, developing deep fruit intensity while preserving the bright acidity and freshness that define our region. This vintage blend—61% Pinot Noir and 39% Chardonnay—was naturally fermented with indigenous yeasts and matured in neutral French oak. Extended lees aging adds a graceful textural depth, complementing the wine’s varietal clarity and elegant complexity.
TASTING NOTES
TASTING NOTES
In the glass, a luminous pale salmon with copper highlights. Aromas of fresh raspberry, blood orange zest, and white peach are lifted by delicate floral notes of hibiscus and rose. On the palate, vibrant red berries and mandarin citrus unfold over subtle layers of spiced brioche and mineral tones. A refined mousse enhances the creamy texture, leading to a long, refreshing finish that showcases the wine’s poise and finesse.
