Looking at the climatic parameters conducive to the emergence of transcendent still Pinot Noirs, Nova Scotia’s climate is markedly cooler than those that have set the precedent in aspiring to greatness in red wine.
That is why, historically, our annual crop of Pinot Noir has almost exclusively served our traditional sparkling method program. This changed in the summer of 2020 when record-setting heat units prompted a reflection on new horizons.
Anticipating special potential, we looked to our Nova Scotian winemaking consultant, Alexis Moore, who is known internationally not only as an early adopter and pioneer of natural winemaking but also as being the artisan behind some of the world’s most celebrated Pinot Noirs outside Burgundy.
Alexis and her protégé, our assistant winemaker Erin Carroll, put together a rigorous plan to make the most impactful wine possible, beginning at the site selection stage, all the way to a detailed barrel selection including grain and forest origin.
