In the glass, light gold with a pale salmon hue. On the nose, hints of flint, gunpowder and chalk are complicated by distinct saline perfumes. On the palate, the wine displays tremendous verve and strength, with a structure suggesting the potential for a long life. A powerful sparkling with an equally elegant profile.
The qualitative impact of ageing on lees is a constant exploration at our winery.
This late disgorge 2011 Blanc de Noirs has had two extra years on lees, for a total of five, which is showcased by the added depth and richness. A 100% Pinot Noir offering is a rarity as only three were ever made in our history. The scarcity of those cuvées is partly due to a viticultural shortage, and the very few mature Pinot Noir parcels in NS are highly coveted.
The 2011 vintage was markedly long, cold and dry, serving as an optimal moment to hang grapes longer on the vine while retaining acidity. Built on an everlasting foundation of freshness this wine will maintain its energy for decades to come.
