In the glass, a rich golden wheat colour with a copper hue. On the nose, suggestions of black currant and toasted flaky pastry dough are interlaced with fleur de sel undertones. Concentrated and rich, the palate offers layers of red fruit and yeasty flavors with youthful, vibrant acidity. The finale echoes and expands, with sea minerals and a marine saltiness.

Inspired by tales of the near-miraculous preservation of ancient Champagne bottles found laying dormant for up to 200 years in various Baltic Sea shipwrecks, we launched this risky project aimed at understanding the potential benefits of ageing wine in a dark and cold seabed.

Having navigated many uncertainties that could have led to losing our entire production, this risk-taking adventure turned into a technical success, thanks to the dedication of our mission captain, assistant winemaker Alexandre Morozov. One could argue that the coastal microclimate behind this unique expression of Pinot Noir makes the seabed a natural and intuitive cellar for the final chapter in the creation of this wine. Naturally decorated by the marine life settling on the surface of each individual bottle, everybottle is unique with aleatory signs of underwater growth.

What singular characteristics and variables resulting from the underwater ageing are to be expected? We will limit our suggestions as to what to look for - perhaps a certain marine salinity has (coincidentally) emerged from the depth of the sea ...
